Italian Meatloaf
- 1 nonstick cooking spray
- 1 cup Italian-style seasoned breadcrumbs
- 1/2 cup non-fat skim milk
- 2 tbsp olive oil
- 1/2 onion, finely chopped
- 2 stock celery stalks,finely chopped
- 1 lb lean ground turkey meat
- 1/2 cup grated parmesan cheese
- 1/2 cup carrot puree
- 1/4 cup ketchup
- 1 tsp salt
- 1 pinch or 1/8teaspoon pepper
- 1 cup tomato sauce
- 4 slice turkey bacon opt.
- preheat oven 350*F coat 9x5 inch loaf pan with cooking spray
- in large bowl,soak breadcrumbs in milk
- in frying pan add oil cook onion about 7-10min.
- add celery cook 3-4more min.scrape mix into bowl of breadcrumbs.
- Add turkey beef,parmensan cheese,carrot puree,ketchup,salt and pepper and stir to combined
- turn mix into loaf pan smooth top.
- spread timato sauce over the meatloaf and lay bacon on top.
- Bake 45-50 minutes intill center is not pink
