Lemon & Herb Roasted Chicken
- 2 whole chickens
- 1 lemon
- 4 sprigs fresh thyme leaves
- 4 sprigs fresh rosemary leaves
- 1/2 bunch of fresh parsley
- 3 cloves of garlic (chopped)
- 3 tbsp olive oil, extra virgin
- 1 salt & pepper
- Cut both chickens in half.
- Rub with salt & pepper & olive oil.
- Chop your thyme & rosemary & parsley.
- Then combine with garlic.
- Sprinkle over the chicken and rub all over.
- Cut your lemon in half and squeeze the juice over the chicken.
- Bake at 350 for 1 hour.
- Baste with the juices every half hour.
- Enjoy.
