Black Rice Porridge Recipe

  1. Reserve 250ml (8fl ounce) of the coconut lowfat milk to be used later.
  2. Put the rest of the coconut lowfat milk in a saucepan with the rice, and the salt and cinnamon stick and bring to the boil.
  3. Simmer slowly for 10 min, then add in the sugar.
  4. Continue to simmer, stirring it often, till the porridge is thick.
  5. The whole cooking time will be 50-70 min.
  6. Pour the porridge into a bowl, and throw away the cinnamon stick.
  7. Serve hot or possibly chilled, like rice pudding.
  8. Hot the reserved coconut lowfat milk with a large healthy pinch of salt in a saucepan for a few seconds, and then serve with the rice.
  9. Alternatively, you can serve it with single cream.
