Apple Cheesecake
- 1 c. graham cracker crumbs
- 3 Tbsp. sugar
- 1/2 tsp. cinnamon
- 3 Tbsp. margarine, melted
- 2 (8 oz.) pkg. cream cheese, softened
- 1/2 c. sugar
- 1/2 c. chopped pecans
- 2 eggs
- 4 c. thin peeled apple slices
- 1/3 c. sugar
- 1/2 tsp. vanilla
- 1/2 tsp. cinnamon
- Combine crumbs, 3 tablespoons sugar, 1/2 teaspoon cinnamon and margarine; press onto bottom of 9-inch spring-form pan.
- Bake at 350u0b0 for 10 minutes.
- Combine cream cheese and 1/2 cup sugar, mixing at medium speed on electric mixer until well blended.
- Add eggs, one at a time, mixing well after each addition.
- Blend in vanilla; pour over crust.
- Toss apple with combined 1/3 cup sugar and 1/2 teaspoon cinnamon.
- Spoon mixture over cream cheese layer; sprinkle with pecans.
- Bake at 350u0b0 for 1 hour and 10 minutes. Loosen cake from rim of pan.
- Cool before removing rim.
- Chill.
