Healthy Spicy Egg Frittata (Low Carb)

  1. Preheat oven to 200 C (400 F).
  2. Heat the oil in an oven proof fry pan.
  3. Add onion, chili and red bell pepper and cook for about 3-4 minutes.
  4. Add tomatoes and stir to combine.
  5. Beat the eggs in a small bowl.
  6. Pour the eggs over the top of the onion mixture and top with cheese.
  7. Transfer the pan to the oven and bake for 10-15 minutes or until egg is set throughout.
  8. Place vinegar and cilantro in a bowl and whisk to combine.
  9. Serve frittata hot from the oven with coriander sauce on the side.
