Healthy Spicy Egg Frittata (Low Carb)
- 1 Tablespoon Olive Oil
- 1 whole Red Onion, Chopped
- 2 whole Fresh Long Red Chillies, Thinly Sliced
- 1 whole Red Bell Pepper, Stem And Seeds Removed Then Chopped
- 7 ounces, weight Grape Tomatoes, Halved
- 6 whole Eggs, Slightly Beaten
- 1/2 cups Grated Cheddar Cheese
- 1/4 cups White Balsamic Vinegar
- 1/2 cups Cilantro, Chopped
- Preheat oven to 200 C (400 F).
- Heat the oil in an oven proof fry pan.
- Add onion, chili and red bell pepper and cook for about 3-4 minutes.
- Add tomatoes and stir to combine.
- Beat the eggs in a small bowl.
- Pour the eggs over the top of the onion mixture and top with cheese.
- Transfer the pan to the oven and bake for 10-15 minutes or until egg is set throughout.
- Place vinegar and cilantro in a bowl and whisk to combine.
- Serve frittata hot from the oven with coriander sauce on the side.
