Curry Chicken Recipe
- 1 pkg. boneless chicken breast
- 4 tbsp. Jamaican curry pwdr
- 1/2 c. flour
- 1 teaspoon fresh grnd pepper
- 1/2 stick butter
- 2 cloves fresh garlic
- Wash chicken; pat dry.
- Cut into thin strips, approximately 3 inches long each.
- Mix curry pwdr, flour, salt, pepper in bag.
- Place chicken strips in bag.
- Shake seasonings onto chicken strips.
- Peel garlic, crush.
- Heat 1 tsp.
- of butter in frying pan.
- Add in 1 clove of garlic to melting butter.
- When melted completely, place chicken strips and cook till golden.
- Continue to add in melted butter and garlic to frying pan till all chicken is cooked.
- Gravy: When all pcs are cooked and removed from pan, add in 1 c. of water to pan.
- (Don't remove pan drippings.)
- When boiling, add in chicken pcs and simmer 3-5 min.
- Serve over bed of rice.
