Black-eyed Peas With Winter Squash & Brown Rice
- 1 (12 ounce) packagefrozen cooked winter squash
- 1 (15 ounce) can black-eyed peas
- 1 (8 7/8 ounce) baguncle bens ready whole grain brown rice
- 4 teaspoons olive oil
- 1 teaspoon garlic, minced
- 1 bell pepper, chopped
- 12 onion, chopped
- salt
- pepper
- 4 teaspoons hot pepper sauce
- Microwave frozen squash according to package directions.
- Simmer black-eyed peas over low heat while preparing other ingredients.
- Saute onion, bell pepper, and garlic in olive oil until soft, approximately 5 minutes.
- Microwave Ready Rice.
- Mix Ready Rice with black-eyed peas.
- Stir in squash and the sauted ingredients.
- Add salt and pepper.
- Mix in hot pepper sauce more or less to achieve desired hotness (4 teaspoons will make a mild batch).
