Green Spinach Eggs Loaf
- 4 Eggs
- 2 cup Chopped fresh spinach (I use baby spinach)
- 1 stalk scallion chopped
- 1/4 Yellow onion chopped
- 2 1/4 tsp Chopped mushrooms
- 1 tbsp Whole milk
- 1 Salt to taste
- 1 Sprinkle of black pepper
- 1 Sprinkle of cayenne pepper
- 1 tsp Margarine or butter
- Preheat your over to 400F.
- Crack eggs in a bowl and whisk in the milk, salt, cayenne and black pepper.
- Heat a non stick skillet and add the butter, saute the onions, scallions and mushroom for a minute then add the spinach and cook for another 30 seconds
- Pay a loaf pan with Pam and pure your egg mixture in
- Pure all the spinach mixture into the eggs and give it a slight stir
- Bake for 10-15 minutes or until the top of the egg loaf start to brown.
- You can add cheese if you want it to taste more like a quiche
