Green Spinach Eggs Loaf

  1. Preheat your over to 400F.
  2. Crack eggs in a bowl and whisk in the milk, salt, cayenne and black pepper.
  3. Heat a non stick skillet and add the butter, saute the onions, scallions and mushroom for a minute then add the spinach and cook for another 30 seconds
  4. Pay a loaf pan with Pam and pure your egg mixture in
  5. Pure all the spinach mixture into the eggs and give it a slight stir
  6. Bake for 10-15 minutes or until the top of the egg loaf start to brown.
  7. You can add cheese if you want it to taste more like a quiche
