Batter Dipped Poppy Seed Crabs Recipe
- 1 c. All-purpose flour
- 1 tsp Baking pwdr
- 1/2 tsp Salt
- 3/4 c. Blue cornmeal
- 3 Tbsp. Poppy seeds
- 2 x Large eggs
- 1 c. Lowfat milk
- 1/2 c. Unsalted butter
- 8 sm Soft-shell crabs Margarita Jalapeno Salsa (see index)
- In a bowl, mix flour, baking pwdr and salt; stir in cornmeal and poppy seeds.
- In another bowl, lightly beat Large eggs; blend in lowfat milk, then combine lowfat milk mix with dry ingredients and stir till well blended.
- Add in a little more lowfat milk, if necessary, to make a smooth bater which will cling to crabs.
- Heat butter in a large, shallow skillet over medium heat.
- Dip crabs in batter to coat; add in to skillet and cook till golden on both sides, turning once.
- Serve with salsa.
- Makes about 4 servings.
