Perfect Raisin Drop Cookies Recipe
- 2 c. raisins
- 1 teaspoon soda
- 2 c. sugar
- 1 c. shortening
- 1 teaspoon vanilla extract
- 3 Large eggs, beaten
- 4 c. flour
- 1 teaspoon baking pwdr
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 c. minced walnuts
- Cook raisins in 1 c. water in saucepan for 5 min.
- Cold.
- Add in soda.
- Let stand for 5 min.
- Drain, reserving liquid.
- Cream sugar and shortening in bowl till light and fluffy.
- Add in vanilla, Large eggs and reserved liquid; mix well.
- Sift in flour, baking pwdr, salt, cinnamon and nutmeg; mix well.
- Stir in walnuts and raisins.
- Drop by teaspoonfuls onto greased cookie sheet.
- Bake at 375 degrees for 13 min.
- Cold on wire rack.
- Store in airtight container.
- Yield: 9 dozen.
