Patacones with Spicy Bean Dip

  1. To make Patacaones: Score plantains lengthwise, peel, cut into discs about 1/2-inch thick and set aside.
  2. Heat oil in deep saucepan or large skillet.
  3. When hot, gently place several plantain slices into pan, and fry, turning occasionally, until golden.
  4. Remove from oil, and drain on paper towels.
  5. Let cool for 5 minutes, and, using cleaver, press pieces until flat.
  6. Repeat with all plantains.
  7. Reheat oil in skillet, and refry all plantain pieces until slightly browned.
  8. Remove from heat, drain on paper towels and sprinkle with salt before serving.
  9. Set aside.
  10. To make Spicy Bean Dip: Heat oil in large skillet over medium heat.
  11. When very hot, add onions, and saute until translucent, about 5 minutes.
  12. Add garlic and chiles, and saute 2 minutes.
  13. Add cumin, salt, black pepper, rosemary and beans.
  14. Cook until heated through, about 5 minutes.
  15. Remove from heat.
  16. Spoon mixture into food processor, adding water as needed to process.
  17. Add cilantro, and puree until smooth.
  18. Spoon into serving dish, top with sour cream and serve hot.
