Strawberry Banana Muffins
- 1 cup sliced fresh strawberries
- 2 tablespoons sugar
- 23 cup mashed banana
- 12 cup Splenda sugar substitute
- 12 cup milk
- 2 large egg whites
- 2 tablespoons vegetable oil
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 12 teaspoon cinnamon
- 14 teaspoon salt
- Preheat oven to 350 F and grease or line muffins tins with paper cups.
- Toss strawberries with 2 Tbsp sugar and set aside.
- In a large bowl, stir banana, remaining 1/2 cup sugar milk, egg whites, oil and vanilla together.
- In a separate bowl, sift flour, baking powder, cinnamon and salt.
- Stir dry ingredients into banana mixture just until blended.
- Fold in strawberries and spoon into muffin cups.
- Bake for 20 to 25 minutes, until a tester inserted in the center comes out clean.
- Allow to cool for 15 minutes before turning out.
