Dilled Pulled Beef Sandwiches
- 3 lb. boneless beef chuck
- 1 jar (8 oz.) dilled pickles
- 1 bottle (8 oz.) BBQ sauce (or homemade)
- 1 tbsp. garlic powder
- 1 tsp. thyme
- cumin
- Salt and pepper, to taste
- Season roast with seasonings and place in a crockpot.
- Put in just enough water to cover roast.
- Add half of the jar of pickles including juice.
- Cook on low until meat is tender and shreds easily, about 6 hours.
- Drain and shred beef, discarding pickles.
- Place beef back into pot.
- Add all of the BBQ sauce and the rest of the jar of pickles.
- Simmer for 45-60 minutes on low, stirring occasionaly.
- Serve on toasted kaiser rolls, with additional BBQ sauce and new, crisp pickles and horseradish sauce.
