KRAFT Cajun-Style Brunch Eggs

  1. CONVENTIONAL: In a medium skillet, saute onion in margarine until tender.
  2. Add tomatoes; bring to a boil.
  3. Reduce heat; break eggs into pan.
  4. Cover and cook until eggs are almost set.
  5. Sprinkle with cheese; replace cover.
  6. Let stand to melt cheese.
  7. MICROWAVE: In a 2 quart (2 L) microwaveable covered casserole, melt margarine on LOW for 30 seconds.
  8. Add onion.
  9. Cook on HIGH 1-2 minutes UNTIL ONIONS ARE SOFT.
  10. Add tomatoes.
  11. Cover and cook on HIGH for 5-7 minutes until tomatoes boil.
  12. Beak eggs over tomatoes.
  13. Pierce yolks.
  14. Cover and cook on HIGH 3-5 minutes until eggs are desired doneness.
  15. Remove cover.
  16. Sprinkle with cheese.
  17. Cook on HIGH 1 minute to melt cheese.
