KRAFT Cajun-Style Brunch Eggs
- 1 Tbsp. margarine
- 1 small onion, diced King Sooper's 1 lb For $0.99 thru 02/09
- 1 can (19 oz/540 mL) stewed tomatoes, (if desired, use a flavoured variety such as Italian) King Sooper's 1 lb For $0.99 thru 02/09
- 4 eggs
- 1 cup shredded Cracker Barrel Light Cheddar Cheese
- CONVENTIONAL: In a medium skillet, saute onion in margarine until tender.
- Add tomatoes; bring to a boil.
- Reduce heat; break eggs into pan.
- Cover and cook until eggs are almost set.
- Sprinkle with cheese; replace cover.
- Let stand to melt cheese.
- MICROWAVE: In a 2 quart (2 L) microwaveable covered casserole, melt margarine on LOW for 30 seconds.
- Add onion.
- Cook on HIGH 1-2 minutes UNTIL ONIONS ARE SOFT.
- Add tomatoes.
- Cover and cook on HIGH for 5-7 minutes until tomatoes boil.
- Beak eggs over tomatoes.
- Pierce yolks.
- Cover and cook on HIGH 3-5 minutes until eggs are desired doneness.
- Remove cover.
- Sprinkle with cheese.
- Cook on HIGH 1 minute to melt cheese.
