Sardines in Olive Oil
- 3 tbsp olive oil
- 2 garlic cloves, finely chopped
- 1/2 tsp fresh ground black pepper
- 1 rock salt
- 1/4 tsp paprika (add more if you prefer)
- 1/4 tsp chilli powder (add more if you prefer)
- 2 tbsp freshly squeezed lemon juice
- 6 prepared sardines ( 2 per person)
- Rinse and salt the sardines the night before coating them well with a good handful of salt.
- Place in fridge until needed.
- Pre-heat the oven to 200 Celsius.
- Place sardines on a oven proof flat tray and coat with the rest of the ingredients.
- Cook for about 20 minutes.
- No need to turn over.
- Note: This can also be done on the barbecue.
- Once cooked serve immediately.
