Judy's Lemon-Marshmallow Slice

  1. Preheat oven to 350F.
  2. Cream butter and sugar.
  3. Add vanilla and water.
  4. Beat until light and fluffy.
  5. Add flour and mix well.
  6. Press into a greased Lamington tin*.
  7. Bake in a 180 degrees C/350 degrees F oven for 15-20 minutes.
  8. Allow to cool.
  9. Spread liberally with Lemon Curd.
  10. Cover with marshmallow and chill.
  11. Cut into fingers and serve.
  12. Marshmallow: Place sugar, gelatine and water in a saucepan.
  13. Boil for 10 minutes.
  14. Allow to cool.
  15. Add vanilla and lemon juice.
  16. Mix in well.
  17. Beat until thick and fluffy.
  18. Pour over the lemon curd.
  19. Chill and serve.
