Banana Nut Lactation Muffins
- 3 cup Oats
- 3 cup Flour
- 1/3 cup Flex Seed Meal
- 1/3 cup Brewers Yeast
- 1 1/2 tsp Baking soda
- 3 tsp Baking powder
- 1 tsp Salt
- 1 tbsp Cinnamon
- 2 Ripe bananas
- 2 cup Applesauce
- 3/4 cup Olive oil
- 1 cup Honey
- 2 tsp Vanilla
- 1 can Coconut milk 15 oz
- 1 tbsp Vinegar
- 1 cup Walnuts crushed(optional)
- Preheat oven to 375
- In a Very large bowl mix the oats, flour,flex seed, yeast, baking soda, baking powder, salt, nuts and cinnamon
- In a second bowl mash the bananas.
- Then add applesauce, oil, honey, vanilla, vinegar, coconut milk, and stir well.
- Combine dry ingredients with wet ingredients, mix until well mixed.
- Fill sprayed muffin tin to about 3/4 full.
- Bake for 20 minutes
