Cheesy Rotini
- 1/2 lb. rotini, uncooked
- 1 lb. ground beef
- 1 small green pepper, chopped
- 1/2 medium onion, chopped
- 1 (14 1/2 oz.) can whole tomatoes, broken up and undrained
- 1 Tbsp. beef flavored instant bouillon
- 2 tsp. Worcestershire sauce
- 1/3 c. milk
- 1 c. Ricotta cheese
- 1 1/2 c. shredded Cheddar cheese
- Prepare rotini as directed on package.
- Drain.
- In a large skillet, cook ground beef, green pepper and onion, over medium heat for 5 to 7 minutes, stirring occasionally.
- Drain fat.
- Add tomatoes, bouillon, Worcestershire sauce, salt and pepper to taste. Simmer for 5 minutes.
- Remove from heat; stir in milk, Ricotta cheese, 1 cup Cheddar cheese and rotini.
- Pour into a 2 1/2-quart baking dish.
- Top with remaining 1/2 cup cheese.
- Bake, covered, in a 350u0b0 oven for 30 minutes.
- Makes 4 to 6 servings.
