Cheddar corn chowder
- 8 oz bacon
- 1/4 cup olive oil
- 6 cup yellow onion
- 4 tbsp unsalted butter
- 1/2 cup flour
- 2 tsp kosher salt
- 1 tsp black pepper
- 1/2 tsp ground tumeric
- 12 cup chicken stock
- 6 each diced potatoes
- 3 lb frozen corn
- 2 cup half and half
- 1/2 lb sharp white cheddar gratrd
- cook bacon and olive oil in large stock pot until bacon is crisp
- remove bacon and add onions and butter to fat until onions are translucent
- stir in flour, salt, pepper and turmeric cook for 3 minutes
- add chicken stock and potatoes and boil for 15 minutes
- add corn, half and half and cheddar and cook till cheese is melted.
- garnish with bacon
