Pork Fillet With Mozzarella
- olive oil
- 4 pork cutlets, pounded, about 6 ounces each
- 4 slices mozzarella cheese
- 2 tablespoons capers, rinsed
- 4 slices tomatoes
- Heat oil in skillet.
- Season pork with salt and pepper.
- Cook for 2 - 3 minutes on each side until browned.
- Place a slice of cheese on each one, followed by a sprinkle of capers and a slice of tomato.
- Cover and cook 6 - 7 minutes and cheese is melted.
