Corn Casserole
- 1 stick butter
- 1 box Jiffy Corn bread mix
- 2 eggs
- 1 can whole cornel corn, drained
- 1 can cream style corn
- 1/2 cup chopped green bell pepper
- 1 small onion, chopped
- 2 cup shredded mild cheddar cheese (I use Mexican cheese)
- 1 cup sour cream
- 1 salt & pepper to taste
- Preheat oven to 350F.
- Melt butter in microwave.
- Add remaining ingredients and mix well.
- Spray Pam on 9x13 baking pan.
- Pour mixture into baking pan and bake uncovered for 1 hour.
- Cool for 10 min.
- Then cut into squares and enjoy!
