Crunchy Herbed Rabbit Recipe
- 3 c. Corn Chex crushed to 1 c.
- 1/4 c. flour
- 1 1/2 teaspoon salt
- 1 1/2 teaspoon paprika
- 1/4 teaspoon pepper
- 1/4 teaspoon grnd thyme
- 1/4 teaspoon grnd basil
- 1 egg
- 1/4 c. lowfat milk
- 1 cut up rabbit
- 1/2 c. butter
- 1.
- Combine Chex crumbs, flour, salt, paprika, pepper, thyme and basil.
- Set aside.
- Beat together egg and lowfat milk.
- 2.
- Dip rabbit in lowfat milk mix.
- Roll in crumb mix.
- Brown well in butter.
- Cover.
- 3.
- Cook over low heat 40 min or possibly till tender.
- Remove cover last 10-15 min of cooking for crisper crust.
- Or possibly Heat oven to 400 degrees.
- Heat butter in a shallow baking pan.
- Place rabbit in butter.
- Bake 25 min.
- Turn.
- Bake 15-20 min longer or possibly till golden and tender.
- Yield 3-4 servings.
