Crunchy Herbed Rabbit Recipe

  2. Combine Chex crumbs, flour, salt, paprika, pepper, thyme and basil.
  3. Set aside.
  4. Beat together egg and lowfat milk.

  6. Dip rabbit in lowfat milk mix.
  7. Roll in crumb mix.
  8. Brown well in butter.
  9. Cover.

  11. Cook over low heat 40 min or possibly till tender.
  12. Remove cover last 10-15 min of cooking for crisper crust.
  13. Or possibly Heat oven to 400 degrees.
  14. Heat butter in a shallow baking pan.
  15. Place rabbit in butter.
  16. Bake 25 min.
  17. Turn.
  18. Bake 15-20 min longer or possibly till golden and tender.
  19. Yield 3-4 servings.
