Spanish Seafood Rice

  1. Heat the oil in a large saucepan and soften the onion for 6-7 minutes.
  2. Add the red pepper and garlic and cook for 2 minutes then stir in the paella rice and cook for 1 minute,stirring to coat.
  3. Pour the stock.
  4. Add the saffron and bring to a boil.
  5. Cook,uncovered, at a gentle bubble, forv20 minutes, stirring occasionally,until rice is tender
  6. Stir the seafood, cooked chicken breast and lemon juice and cook for 2 minutes or until piping hot and complete cooked through.
  7. Bon appetit!
