Greek Salad Ii Recipe
- 1 head iceberg lettuce
- 1 cucumber, thinly sliced
- 2 ripe tomatoes, cut into wedges
- 1 lg. onion, sliced into rings
- 1/2 c. radishes, sliced
- 1 c. feta, crumbled
- 12 Greek olives
- 1 tbsp. capers, liquid removed
- 6 anchovies, minced
- 1 teaspoon oregano
- 1/2 c. extra virgin olive oil
- 2 tbsp. cider vinegar
- 1/2 teaspoon dry mustard
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1.
- Combine first 9 ingredients; refrigerateat least 1 hour.
- 2.
- Combine remaining ingredients and beat well.
- When ready to serve, toss with salad.
- Serves 6.
