Caprial's Jammers Recipe
- 2 c. All-purpose, (plain) flour
- 3/4 c. Confectioners', (icing) sugar
- 1 x Egg
- 1 c. Unsalted butter
- 1 tsp Vanilla extract
- 1 tsp Salt
- 1/3 c. Raspberry jam
- Preheat the oven to 350 F/175 C/gas mark 4.
- In a food processor, place the four, sugar, and egg.
- Turn the machine on and slowly add in the butter, 2 Tbsp./30 g/1 oz at a time.
- Add in the vanilla and salt.
- Process till the dough forms a ball on top of the blades.
- With the palms of your hands, roll the dough into balls about 2 inches/5 cm diameter.
- Place the balls on a greased baking sheet.
- Press the balls down slightly with the bottom of a glass or possibly jar to a thickness of 1/4 inch/0.5 cm.
- Press your thumb into the middle of each circle to create a well, with out pressing all the way through the dough.
- Fill each well with about 1/2 tsp.
- of the jam.
- Bake till the cookies are golden, about 10 to 12 min.
- Serve alone or possibly with ice cream.
- Makes one dozen cookies
