Lime Syrup

• 1 cup caster sugar
• 8 cardamom pods, green, seeds removed and crushed
• 34 cup water
• 34 cup lime juice
• 1 tablespoon lime zest

1. Put the caster sugar, cardamom pods and water in pan.
2. Stir over a gentle heat until the sugar has dissolved.
3. Take off the heat and allow to cool before adding the lime zest.
