Easy, Tasty Barley Jumble

  1. Soak the barley in enough water to cover it over an inch.
  2. Put the oil, salt, seasoning packets and soy sauce in with it.
  3. Leave it for about an hour (or overnight).
  4. Bring the water to a boil.
  5. Turn the heat down to a simmer for about 20 minutes.
  6. Meanwhile, chop the vegetables and tofu, and scramble the egg whites (chop them too).
  7. When the water has almost disappeared, add the rest of the ingredients.
  8. Mix it up, and uncover it about ten minutes.
