Szechuan Pork (Microwave) Recipe
- 1 pound pork boneless loin or possibly leg
- 1 tbsp. soy sauce
- 1 tbsp. cornstarch
- 1/2 teaspoon grnd red pepper
- 1 clove garlic, finely minced
- 3 c. broccoli flowerets or possibly 1 pkg. (16 ounce.) frzn broccoli cuts, thawed
- 1 sm. onion, cut into eighths
- 1 can (8 ounce.) whole water chestnuts, liquid removed
- 1/4 c. chicken broth
- 1/4 c. peanuts
- Trim fat from pork; cut pork into slices, 2 x 1 x 1/8 inch.
- Toss pork, soy sauce, cornstarch, red pepper and garlic in 3 qt casserole.
- Cover tightly and chill 20 min.
- Cover pork mix tightly and microwave on high 8 to 10 min, stirring after 4 min, till pork is no longer pink.
- Stir in broccoli, onions, water chestnuts and broth.
- Cover tightly and microwave 6 to 7 min, stirring after 3 min, till broccoli is crisp tender.
- Stir in peanuts.
- Serve with rice if you like.
- 4 servings.
