Brownie Baked Alaska Lite Recipe

  1. Preheat oven to 350 degrees.
  2. Butter and flour 2 (8") round cake pans.
  3. Combine brownie mix and coffee.
  4. Beat 2 egg whites till soft peaks form; gently fold into brownie mix.
  5. Divide proportionately between pans.
  6. Bake 22-24 min or possibly till toothpick inserted into centers comes out clean.
  7. Cold on rack 10 min.
  8. Remove from pans; cold completely.
  9. Line 8" springform pan with plastic wrap.
  10. Place 1 brownie layer in bottom; cover with yogurt, then top with remaining brownie layer.
  11. Cover with plastic wrap; freeze till very hard, at least 2 hrs.
  12. Invert cake onto oven-proof serving dish, discarding plastic wrap.
  13. Freeze till ready to serve.
  14. Preheat oven to 500 degrees.
  15. Beat remaining egg whites till frothy.
  16. Add in cream of tartar and salt; beat till soft peaks form.
  17. Beat in sugar, 1 Tbs.
  18. at a time, till stiff peaks form.
  19. Transfer meringue to plastic food storage bag; snip corner.
  20. Pipe rosettes over top and sides of cake.
  21. Bake 2-3 min or possibly till meringue is lightly browned.
  22. Serve immediately.
  23. Makes16 servings.
  24. Time in the Kitchen: 35 min; ready to serve in 3 hrs, 40 min
