Chocolate-orange pudding
- 1 envelope Unflavored gelatin
- 1 cup Low-fat (1%) milk
- 1/3 cup Firmly packed dark brown sugar
- 3/4 cup Part-skim riccota cheese
- 1/4 cup Unsweetened cocoa powder
- 1 tbsp Orange liquor
- 1 tsp Orange liquor
- 1 tsp Vanilla extract
- In small saucepan sprinkle gelatin over milk
- Let stand until softened
- Stir in brown sugar
- Cook over medium-low heat stirring constantly about 2 minutes until gelatin is completely dissolved (do not boil)
- In blender combine riccota cheese cocoa powder orange liquor and vanilla extract
- Process on medium speed about 1 minute until pureed scraping down sides of container as necessary
- Reduce speed down to low
- Gradually add milk mixture process until combined
- Evenly pour pudding into each of four 6 ounce custard cups
- Cover with plastic wrap refrigerate until set at least 2 hours
