Chocolate-orange pudding

  1. In small saucepan sprinkle gelatin over milk
  2. Let stand until softened
  3. Stir in brown sugar
  4. Cook over medium-low heat stirring constantly about 2 minutes until gelatin is completely dissolved (do not boil)
  5. In blender combine riccota cheese cocoa powder orange liquor and vanilla extract
  6. Process on medium speed about 1 minute until pureed scraping down sides of container as necessary
  7. Reduce speed down to low
  8. Gradually add milk mixture process until combined
  9. Evenly pour pudding into each of four 6 ounce custard cups
  10. Cover with plastic wrap refrigerate until set at least 2 hours
