Genovese with Shrimp and Mozzarella Cheese
- 400 grams Peeled shrimp
- 100 grams Mozzarella cheese (1 cm cubes)
- 150 grams Shimeji mushrooms
- 2 tbsp Olive oil
- 1 Salt and pepper
- 4 tbsp White wine
- 6 tbsp Genovese pesto
- 200 grams Pasta
- Heat olive oil in a pan and add the shrimp, shimeji mushrooms and white wine and season with salt and pepper.
- Add the cooked pasta, mozzarella cheese and genovese pesto and quickly toss to combine.
- Season with salt and pepper.
