Orange Bread

  1. Prepare the ingredients.
  2. Rinse the orange in water, and scrub with plenty of coarse salt.
  3. Put all the ingredients listed up to the yeast in a bread machine, and start the 'dough kneading' program.
  4. Add the butter 5 minutes in.
  5. Take the finished dough out, punch it down lightly, and divide in half.
  6. Round off each portion of dough and rest it for 15 minutes.
  7. After the dough has rested, place each piece seam side down and roll out to about 27cm long.
  8. (It is a rather sticky dough, so dust the surface on both sides as you work.)
  9. Roll up the dough from the edge.
  10. Seal off the ends of the rolled up dough.
  11. Roll both pieces of dough with both hands to neaten up the shapes.
  12. Place the two pieces of dough side by side, and pinch them together at one end.
  13. Twist the dough 3 times.
  14. Pinch together the ends of the twisted dough.
  15. Put the dough in an oiled bread pan.
  16. If the dough is longer than the pan, twist the dough a little while pushing it in from both sides towards the middle to shrink it enough to fit.
  17. Leave it to rise until the highest part of the dough is at the height of the sides of the pan.
  18. Start preheating the oven to 200C at the right time.
  19. Lower the oven temperature to 180C and bake for 15 minutes.
  20. Lower the temperature again to 160C and bake for another 15 minutes.
  21. When the bread is baked, drop it pan and all from about a 15 cm height onto your countertop to push out the hot air.
  22. Take the loaf out of the pan to cool, and it's done.
  23. This is how the bread looks when sliced.
  24. The crumb is finely textured, moist and soft.
  25. And a bit chewy too.
  26. It's such a pretty orange color.
