Beth's Fruited Chicken Salad Recipe

  1. Combine first 6 ingredients and toss.
  2. Mix mayonnaise, lowfat sour cream, lemon juice, salt, and white pepper.
  3. Add in to chicken mix and stir well.
  4. Chill.
  5. To serve, arrange escarole around edge of Cheese Tart Shells; spoon chicken mix on top.
