Beth's Fruited Chicken Salad Recipe
- 4 c. minced cooked chicken
- 2 c. minced celery
- 2 c. halved seedless red or possibly green grapes
- 1 (15 ounce.) can pineapple tidbits, liquid removed
- 1 (11 ounce.) can mandarin oranges, liquid removed
- 1 c. toasted slivered almonds
- 1/2 c. mayonnaise
- 1/2 c. lowfat sour cream
- 2 tbsp. lemon juice
- 1/8 teaspoon salt
- 1/8 teaspoon white pepper
- Combine first 6 ingredients and toss.
- Mix mayonnaise, lowfat sour cream, lemon juice, salt, and white pepper.
- Add in to chicken mix and stir well.
- Chill.
- To serve, arrange escarole around edge of Cheese Tart Shells; spoon chicken mix on top.
