Grilled Pork & Papaya Tacos

  1. Place barbecue sauce, 1 cup of the papayas, the mustard and cumin in blender; blend until smooth.
  2. Pour over ribs in resealable plastic bag.
  3. Seal bag; turn to evenly coat ribs with barbecue sauce mixture.
  4. Refrigerate 4 hours to marinate, turning bag occasionally.
  5. Remove ribs from marinade; discard bag and marinade.
  6. Preheat grill to medium-high heat.
  7. Grill ribs 12 to 15 min.
  8. on each side or until cooked through.
  9. Shred meat with two forks.
  10. Mix remaining 1 cup papayas, the mint and pepper; spread evenly onto tortillas.
  11. Top with meat; roll up.
