Capsicum Relish
- 2 red capsicums, chopped
- 1 red onion, peeled and chopped
- 1 cup white wine vinegar
- 1 cup caster sugar
- 1 tablespoon chili
- In a medium saucepan over medium heat, mix together the capsicums, onion, vinegar, sugar and chillies.
- Bring to the boil, then reduce heat to simmer and stirring occasionally, cook 30 minutes or until thickened.
- Refrigerate at least 4 hours before serving.
