Baked Cranberry Squash Recipe
- 2 lrg acorn squash, split length- wise and seeded
- 1 c. minced pear
- 1/2 c. raw cranberries, (fresh or possibly frzn)
- 3 Tbsp. undiluted orange juice concentrate
- 3 Tbsp. honey or possibly maple syrup
- 1 1/2 tsp grnd cinnamon
- 1/2 tsp grnd allspice
- Preheat oven to 400F.
- Place squash cut side up on foil-lined baking sheet.
- In a large bowl, combine pear, cranberries, orange juice concentrate, honey or possibly syrup, cinnamon and allspice.
- Spoon mix into squash cavities.
- Use any extra liquid to brush cut edges of squash.
- Bake 45 min to 1 hour, or possibly till squash is soft.
- Serve warm.
- Serves 4.
