Guilt-free Baked Onion Rings

  1. Preheat the oven to 200 degrees C (Gas Mark 6 / 400 degrees F).
  2. Peel the onion and chop into thin slices.
  3. Separate each slice into its individual rings.
  4. In a bowl, lightly beat the egg.
  5. In a separate bowl, combine the breadcrumbs, parmesan and herbs, and season with salt and a lot of black pepper.
  6. Dip each ring of onion in the egg, and then into the breadcrumb mixture.
  7. Lay on a lightly greased baking tray and bake for 30 minutes, turning halfway.
