French-Bread Stuffing with Oysters, Bacon, and Chipotle

  1. Preheat oven to 350 degrees F. In a large cast-iron skillet over medium-high heat, add oil and bacon and cook, stirring frequently, until bacon starts to crisp.
  2. Add all vegetables, chipotle, and garlic; season with salt and pepper; and saute for 5 to 8 minutes, continuing to stir frequently.
  3. Stir in dry herbs and transfer to a large bowl.
  4. Add bread, cilantro, and oysters and mix.
  5. Add stock and mix again.
  6. Fill a 9- by 12-inch buttered casserole dish until mixture is 2 inches high.
  7. Bake, covered, for 25 minutes, then uncover and bake for 25 minutes more.
