Acorn Squash With Pear Stuffing Recipe

  1. Cut each squash in half lengthwise; remove and throw away seeds and membranes.
  2. Place squash halves, cut-side down, in a 13- by 9-inch baking dish.
  3. Add in water to depth of 1 inch.
  4. Bake, covered, at 400 degrees for 45 min.
  5. Drain.
  6. Return squash halves to dish, cut-side up.
  7. Set aside.
  8. Heat butter in a large skillet over medium heat; add in onion, and cook, stirring occasionally, 20 min.
  9. Add in pear and next 5 ingredients; cook, stirring occasionally, 5 min.
  10. Spoon mix into squash halves.
  11. Bake at 350 degrees for 15 to 20 min.
  12. Bring orange juice to boil in a small saucepan.
  13. Stir in sugar, and boil 10 min.
  14. Serve over squash.
  15. This recipe yields 4 servings.
