Apple Brazil Nut Squares Recipe
- 2 c. flour
- 3 Tbsp. sugar
- 3/4 c. butter or possibly margarine, cut up
- 1 x egg, slightly beaten
- 1 Tbsp. fresh lemon juice
- 4 Tbsp. ice water
- 6 x egg yolks
- 3/4 c. sugar
- 1/8 tsp salt
- 3/4 c. Brazil nuts, pulverized
- 1/3 c. raisins, dark or possibly light
- 3 c. tart apples, shredded (about 3 large)
- 1/2 tsp cinnamon
- 6 Tbsp. apricot jam
- 6 Tbsp. butter or possibly margarine, melted Sweetened whipped cream Toasted slivered Brazil nuts
- *Almonds can be substituted for the Brazil nuts.
- Mix flour and sugar in bowl.
- Cut butter into mix till pcs are the size of peas.
- Blend the egg, lemon juice and 3 Tbsp.
- water.
- Sprinkle over the dry ingredients.
- Toss with fork till flour is moistened.
- Press into a ball.
- Add in last Tbsp.
- of water, if needed.
- Roll pastry into a 9x13-inch baking pan, building the edge up about 1 inch.
- In small bowl, beat egg yolks till fluffy.
- Add in sugar and salt.
- Beat at high speed till thick and lemon colored.
- Stir in the nuts and raisins.
- Mix in the apples and cinnamon.
- Spread apricot jam over the pastry.
- Top with apple-nut mix.
- Bake at 350 degrees F. for 25 min.
- Drizzle with melted butter.
- Return to oven.
- Bake 15-20 min longer till top is golden brown.
- Cut into squares.
- Serve hot with slightly sweetened whipped cream and garnished with Brazil nuts.
- Yield: 12 Servings
