Shrimp in a Chipotle, Lime & Cilantro Remoulade

  1. Whiz all of the ingredients except the salt and pepper (and of course the shrimp!)
  2. in a food processor until combined.
  3. Add salt and pepper and adjust the seasonings to taste.
  4. Meanwhile, bring a large pot of water to a vigorous boil for 15-20 minutes.
  5. Turn the water off, and as soon as it stops boiling, put the shrimp in.
  6. Let them sit in the hot water for 3-4 minutes until theyre an opaque pinkish-white.
  7. Thats all it takes!
  8. (Of course you should check one to make sure theyre done before you take them out of the water.)
  9. Immediately plunge them into an ice water bath until cool, then take them out, peel, pat dry, and toss with the sauce.
