Spice Bread or Muffins
- 12 cup butter
- 12 cup sugar
- 12 cup brown sugar
- 13 cup cinnamon applesauce
- 1 tablespoon flax seed meal
- 3 tablespoons wheat germ
- 2 eggs
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 1 pinch nutmeg (or more to taste)
- 12 teaspoon pumpkin pie spice
- 1 teaspoon baking soda
- 12 teaspoon salt
- 34 cup flour
- 34 cup whole wheat flour
- 1 cup pumpkin
- 12 cup reduced-fat sour cream or 12 cup yogurt
- 23 cup walnuts, chopped
- Cream together the butter and sugars.
- Add the applesauce, eggs, vanilla, spices, flax seed meal and wheat germ- mix well.
- Mix together the flour, baking soda and salt.
- Add to wet ingredients just till mixed.
- Stir in pumpkin, sour cream and nuts.
- Spoon into large greased muffin tins or a bundt pan.
- This will make 12 large muffins or a full bundt pan.
- Cook bread for 50-60 min and muffins for 25-30.
- Be sure to check for doneness with a toothpick.
