Tipple Thyme

  1. Make thyme syrup: Bring ingredients to a boil in a saucepan, stirring occasionally.
  2. Reduce heat to low.
  3. Simmer for 10 minutes.
  4. Let cool.
  5. Double strain into a glass bottle.
  6. To make cocktail: Pour juices and syrup into a Champagne flute.
  7. Top with sparkling wine.
  8. Garnish with lemon wheel with sprig of thyme on rime of glass.
