Low Fat Cheesecake

  1. Preheat oven to 350 degrees.
  2. In a mixing bowl, beat cream cheese, 2/3 cup sugar and 1/2 teaspoon vanilla until fluffy.
  3. Gradually add egg substitute and beat until smooth.
  4. Pour into a 9-in.
  5. pie plate that has been coated with cooking spray.
  6. Bake for 30-35 minutes or until puffy and light brown around the edges.
  7. Cool on a wire rack for 10 minutes.
  8. Combine sour cream, remaining sugar and vanilla.
  9. Spread over cheesecake.
  10. Bake 15 minutes longer.
  11. Cool completely on a wire rack, then refrigerate.
  12. Before serving, top with cherry pie filling.
