Chicken Salad Club & Baby Spinach Sandwich

  1. Crisp bacon over medium high heat.
  2. (about 3 minutes on each side)
  3. While bacon crisps, take rotisserie chicken and pull the meat from 1/2 of the chicken.
  4. Break-up meat into bite sized strips.
  5. Take pulled chicken and add mayo, mustard, sweet relish, sea salt & pepper to a medium bowl.
  6. Give it a good stir to get everything incorporated.
  7. Next add crisped and chopped bacon.
  8. Stir to incorporated bacon.
  9. Take bread slices and toast if desired (lightly toasted).
  10. Coat one slice of bread with the chicken salad, the other slice with a thin coat of mayo, if desired.
  11. Top the chicken salad with roma tomatoes and baby spinach or lettuce.
  12. Close up the sandwich and repeat.
