Chicken Salad Club & Baby Spinach Sandwich
- 4 strips Bacon, Chopped
- 1/2 whole Rotisserie Chicken, Meat Pulled Off The Bone And Shredded
- 3 Tablespoons Mayonnaise
- 2 Tablespoons Mustard, Yellow Or Dijon
- 2 Tablespoons Sweet Relish
- 1/2 teaspoons Sea Salt
- 1/2 teaspoons Pepper, Fresh-ground
- 8 slices Bread, Whole Wheat
- 3 whole Handfuls Baby Spinach
- 1 cup Roma Tomatoes, Diced
- Crisp bacon over medium high heat.
- (about 3 minutes on each side)
- While bacon crisps, take rotisserie chicken and pull the meat from 1/2 of the chicken.
- Break-up meat into bite sized strips.
- Take pulled chicken and add mayo, mustard, sweet relish, sea salt & pepper to a medium bowl.
- Give it a good stir to get everything incorporated.
- Next add crisped and chopped bacon.
- Stir to incorporated bacon.
- Take bread slices and toast if desired (lightly toasted).
- Coat one slice of bread with the chicken salad, the other slice with a thin coat of mayo, if desired.
- Top the chicken salad with roma tomatoes and baby spinach or lettuce.
- Close up the sandwich and repeat.
