Light and Luscious Fruit Cake
- 100g apricots
- 100g dates
- 300g sultanas
- 300g raisins
- 250g block PHILADELPHIA Light Cream Cheese, softened
- 125g soft brown sugar
- 1 1/2 teaspoons nutmeg
- 1 1/2 teaspoons cinnamon
- 1 teaspoon bicarbonate of soda
- 1 cup apple and mango juice
- 2 large eggs
- 150g plain flour
- 75g self-raising flour
- Combine fruit, Philly*, sugar, spices, bicarbonate of soda and juice in a saucepan.
- Bring to boil, stirring, then cool.
- Add eggs and mix well.
- Sift in flours and stir until combined.
- Pour into a 24cm lined and greased springform tin.
- Bake at 180C for 55-60 minutes or until a skewer inserted in the centre comes out clean.
