Light and Luscious Fruit Cake

  1. Combine fruit, Philly*, sugar, spices, bicarbonate of soda and juice in a saucepan.
  2. Bring to boil, stirring, then cool.
  3. Add eggs and mix well.
  4. Sift in flours and stir until combined.
  5. Pour into a 24cm lined and greased springform tin.
  6. Bake at 180C for 55-60 minutes or until a skewer inserted in the centre comes out clean.
