Crispy Cucumber Salad with Sesame Mayo and Ponzu

  1. Thinly slice the cucumbers into rounds with a mandoline or a knife.
  2. Put into a plastic bag, sprinkle in some salt, and rub in through the plastic bag.
  3. Discard the moisture that comes out of the cucumber, wash under running water and squeeze.
  4. Thinly slice the chikuwa.
  5. Mix all the listed ingredients together, and it's done.
