Creamy Bean Soup

  1. Heat vegetable oil in a large saucepan over medium-high heat.
  2. Add onion and garlic; cook, stirring occasionally, for 2-3 minutes or until onion is tender.
  3. Stir in beans, salsa, broth, lime juice, and cumin.
  4. Bring to a boil.
  5. Reduce heat to low; cook, stirring occasionally, for 10-12 minutes.
  6. Remove from heat and enjoy.
  7. This is good with shredded mild cheddar cheese sprinkled on top.
