Wild Rice Casserole
- 1 lb. pork sausage (hot or mild)
- 1 large can straw mushrooms
- 2 medium onions
- 2 boxes Uncle Ben's original wild rice
- 1/4 c. flour
- 1/2 c. light cream or milk
- 2 1/2 c. chicken broth
- 1 small pkg. sliced or slivered almonds (optional)
- 1 1/2 c. all-purpose flour
- 1/2 c. sugar
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 c. raisins
- chopped dates
- chopped mixed dried fruit or a combination
- 1/2 c. milk
- 2 eggs
- 1/2 c. vegetable oil
- Turn on the oven to 400u0b0.
- Line twelve muffin pan cups with paper baking cups or grease well with shortening.
- In a medium bowl, stir together flour, sugar, baking powder and salt with a wooden spoon.
- Add fruit and stir until evenly mixed.
