Frozen Grasshopper Pie

  1. Beat marshmallow creme and 2 cups of the whipped topping in large bowl with wire whisk until well blended.
  2. Add mint extract and food coloring; mix well.
  3. Gently stir in chopped wafers.
  4. Spoon into pie crust.
  5. Freeze at least 4 hours or until firm.
  6. (Pie will be firm, but not frozen solid.)
  7. Top with remaining whipped topping just before serving.
  8. Store leftover pie in freezer.
